If Bleachbit could incorporate cleaning Lotus Symphony and Gnucash (for example, the annoying .xac and .log files it creates every few minutes), that would be wonderful.

Where does Lotus Symphony store its files? What kind of files are they? I cannot promise to include it, but it would speed things up if you followed the writing a cleaner guide.
I've used GnuCash. The practical problem is GnuCash doesn't store its files in a consistent location and .log is a generic extension used by other applications, so the .log files cannot be identified by the extension or the location.
